Snowboarding in Aspen for my birthday with vintagejohnny, Michelle and her husband, Chris. The runs were indescribable. The views were breathtaking. The company was amazing!

Tonight I made dinner for vintagejohnny for the very first time. I was a bit wary at first. I couldn't stand the thought of getting food poisoning again, much less get him sick off MY cooking. 

Thankfully, it turned out quite well. Very moist, very scrumptious. 

This is baked chicken with celery and carrots. The recipe is super simple, given to me by my sweetest friend, Michelle. 

Ingredients:
Chicken Drumsticks or Thighs
Lawry's Season Salt
Veggies (Carrots, Onions, and/or Celery) – Sliced ~ 1/4inch thick
1/2 Can of Chicken Broth
Little bit of Butter
Green Onions - cut the length of your finger
Ginger, sliced 

Directions:

1) Preheat the over to 350

2) Place veggies in an oven proof dish

3) Pour chicken broth in the dish

4) Place a small slab of butter underneath the chicken skin

5) Place a slice of ginger and green onion under the chicken (this will give the chicken a little bit of flavor while it cooks in the broth) and place the chicken in the dish.  Make sure the chicken is in the broth so it doesn't dry up, skin side up.

6) Sprinkle some Lawry's season salt on the skin

7) Put the dish in the oven for about 40 minutes

Hello there. I know I've been hiding for quite some time now. There are so many changes [big and small] that are happening and I can't wait to share them with you! 

I have pictures from my time in Aspen a few weeks ago that I need to upload… but I just moved and everything is in boxes and I can't find my picture-uploader-thing. 

Right now, and I mean RIGHT NOW, I am en route to New York via Virgin America and let me tell you, having Internet 35,000 feet in the air is wonder.ful.

Once I get back and situated, I know I'm going to be more consistent with blogging. I can feel it :) 

So I'll leave you with this… I just celebrated my birthday with some amazing friends. We ate at XIV, a very yummy restaurant that looks like someone's fancy living room with a beautiful fireplace, opulent chandeliers, and really cool bookshelves. 

It's a zombie t-shirt. Hee :)
